Ethiopian Coffee Export Guide: ECX, Grades, Certifications & Shipping

Ethiopia is the birthplace of coffee and the largest coffee producer in Africa. For international importers, Ethiopian coffee offers unmatched origin diversity, distinctive flavor profiles, and a range of certifications. This guide covers everything you need to know to source Ethiopian coffee successfully.

Ethiopia's Coffee Origins

Ethiopian coffee is grown across multiple distinct regions, each with unique flavor characteristics:

The ECX Trading System

Most Ethiopian coffee is traded through the Ethiopian Commodity Exchange (ECX), a centralized trading platform that grades, warehouses, and facilitates the sale of coffee between farmers/cooperatives and exporters.

How ECX works

Coffee is delivered to ECX warehouses, graded by ECX quality inspectors, and assigned a grade and lot number. Exporters bid for lots at the ECX trading floor or electronic platform. The winning exporter takes ownership of the lot.

Direct specialty trade

For specialty-grade coffee (Grade 1 and 2), direct trade is permitted under certain conditions. Exporters with direct relationships with cooperatives or washing stations can source outside ECX, subject to Ethiopian Coffee and Tea Authority (ECTA) approval.

What this means for buyers

When you buy from a licensed Ethiopian coffee exporter, they have already purchased the coffee through ECX or direct trade channels. You are buying from the exporter, not directly from the farmer.

Ethiopian Coffee Grades

Ethiopian coffee is graded on a scale of 1–9 based on defect count per 300g sample:

Processing Methods

Washed (Wet Process)

Coffee cherry pulp is removed before drying. Produces clean, bright, acidic cup with clear origin character. Yirgacheffe washed is the benchmark for this style.

Natural (Dry Process)

Whole cherry dried in the sun. Produces fruity, wine-like, full-bodied cup. Harrar natural is the classic example. Higher risk of defects but higher flavor complexity.

Honey Process

Pulp removed but mucilage left on during drying. Intermediate between washed and natural. Produces sweet, complex cup. Less common in Ethiopia.

Anaerobic / Experimental

Specialty processing methods gaining popularity. Coffee fermented in sealed tanks before drying. Produces distinctive, complex flavors. Available from select washing stations.

Certifications Available

Organic Certification

Many Ethiopian smallholder farmers use no synthetic inputs by default. Certified organic coffee is available from cooperatives with USDA NOP or EU organic certification. Carries a price premium.

Fair Trade / Fairtrade

Available from Fairtrade-certified cooperatives. Ensures minimum price floor and social premium for farmers. Popular with European and North American buyers.

Rainforest Alliance

Sustainability certification covering environmental and social standards. Available from select Ethiopian cooperatives.

UTZ Certified

Now merged with Rainforest Alliance. Focuses on sustainable farming practices and traceability.

Cup of Excellence (CoE)

Annual competition identifying the highest-scoring lots in Ethiopia. CoE lots command significant premiums and are sold by auction.

Standard packaging

60 kg jute bags (traditional) or GrainPro/Ecotact lined bags for moisture protection

Specialty packaging

Vacuum-sealed bags or hermetic bags for premium lots requiring extended freshness

Container size

20-foot container holds approximately 275–300 bags (16.5–18 MT); 40-foot holds 550–600 bags

Djibouti Port — transit time to Europe 18–25 days, to USA East Coast 25–35 days
